Peach Melba Mess

Preparation Time: 30 Minutes

Serves: 4

 

Ingredients

  • 1 tin peaches, in juice
  • 1 punnet strawberries
  • (washed, trimmed and sliced)
  • 1 punnet raspberries
  • 4 meringue nests
  • 500ml double cream
  • 20g caster sugar
  • 1 vanilla pod (scraped or a few drops of vanilla essence/extract)
 

Method

Whip the cream with the vanilla and sugar until it forms soft peaks, fold in half the strawberries and raspberries, gently mash with a whisk until the colour of the cream is a light pink.

Fold in a small amount of crumbled meringue.

Have 4 bowls or glasses ready, and sprinkle in some raspberries, strawberries and peach slices in the bottom along with some dry meringue.

Next you can add a layer of the cream mixture and then repeat the process.

Garnish the top with some more raspberries, a strawberry with green intact for colour and a peach slice. Dust with icing sugar.

You can make this well in advance and place in the fridge to chill and then just before serving add the garnish last minute.

This dessert is not suitable for people with diabetes due to the added caster sugar and the shop bought meringue nests, however the recipe can be adapted to suit a sugar free diet by using homemade diabetic meringue nests made with a sweetener.
